Dandelion Bread

Last spring for the first time I made Dandelion Jelly. It was a big hit with my family.

 And yesterday I tried a new dandelion recipe: Dandelion Bread.  Another big hit.

Here's the recipe: 
4 c. flour
4 t. baking powder
1 t. salt
1  1/2 - 2 c. dandelion petals**
1/2 c. vegetable oil
3/4 c. honey
2 eggs
2  2/3 c. milk

Preheat oven to 400.
Combine dry ingredients, including petals.
In separate bowl, mix oil, honey, eggs, and milk.
Stir in dry ingredients and mix well.
Pour batter into 2 greased loaf pans. 
Bake for 20-25 minutes.If not done, lower temperature to 350 and
continue baking, checking every 5 minutes.
Cool on wire rack.

**Remember to wash the blossoms before trimming the petals and make sure you gather blossoms that have not been treated with weed killer.

  2. I've never been brave enough to try eating dandelions, but I sure have enough of them (untreated yard.) I know they are reported to be very tasty fried. And your bread does look very yummy!

  4. Looks lovely, though I am trying to imagine how this type of bread would taste. Do you taste any of the petals as you eat it? Probably not, but I had to ask.

  9. As wonderful as this sounds, I just don't think I could get my dh to eat it! :) Will have to try it once the dandelions are in bloom... My kiddos might be brave enough!

  11. You have the neatest recipes! I am going to HAVE to try this one. We are not lacking in organic dandelions. [o;

    And now I am going to have to re check out the jelly too. I am always on the look out for recipes to use up what we have available.

    It is so good to be back and blogging but the break was much needed. I am so glad I listened to the Lord's promptings b/c I feel very refreshed. I missed visiting you!
